Grains provide a startling array of vitamins and minerals, and are an essential part of a healthy diet. In China, grains such as rice are a diet staple; in fact the cooking of rice is the basis for the character Qi. As health care providers, it is our role to decipher between what is fact and fiction when it comes to grains and pass on this wisdom to those we care for. I learned that there is a whole lot of grain that one could eat if they have a gluten intolerance. Sent my sister some of the info to help her out. Nice to know more about celiac disease and gluten allergies - that one does not mean the other.
